Sel Roti

Ingredients

  •     1 tblspn ghee (soft clarified butter)
  •     1/2 banana, peeled and mashed
  •      pinch baking powder
  •      2 cups rice flour
  •      3 tspns sugar
  •      1 cup milk
  •      2 cups vegetable oil for deep frying

Directions

   1. In a bowl, add ghee, banana, baking powder, rice flour and sugar and mix well
   2. Add milk to make a batter
   3. Heat oil in a deep pan, making sure the oil is not too hot
   4. Take a ladle full of the mixture and pour into the oil making a doughnut like shape
   5. Once it comes to the surface, turn it over and cook for one minute on the other side
   6. Remove from the oil and place on paper towel until you are ready to serve
   7. Repeat with the rest of the mixture

Chatmair from ECS

Chatamari!
As demonstrated to Amendra pokharel

Chatamari is a popular Newari dish, but is made all over Nepal and called by different names by other Nepalese. Chatamari has important connection to the Newari culture. It is specially prepared by Newars in all major gathering of a guthi (a closely knit group of blood relatives). Santu Prajapati and her family members let us grab a peek on the process of making the dish and some of its variants.

Chatamari
Ingredients

1. Precipitate the rice flour; don’t make it too watery.
2. Heat pan for a while.
3. Pour the paste on the pan.
4. Use spoon to spread the paste in the shape of a chapatti.
5. Cook until the bottom turns crisp
6. Oil or ghee in small amount can de added before or during the process of making the chatamari.

Variants of chatamari
Vegetarian or non-vegetarian chatamari can be made by adding various stuffing prepared depending on your taste.

Method to prepare minced meat chatamari
Heat oil in a non-stick sauté pan.
Fry garlic and ginger until light brown.
Add in minced meat, salt and pepper.
Sauté the mixture and add finely chopped chilies and sliced tomatoes.
Stir in for a few of minutes in low heat until all ingredients are cooked.
Transfer the mixture to a plate and let it cool.
On a large plate, put a chatamari.
Spread out across one and half tablespoons of the mixture from the middle.
Serve with pickle and vegetables.

Most Delicious Momo in Kathmandu Valley

MoMo is and will stay one of my favourite food. Living Aboard for so many years trying differnt kinds of food in many European countries. Momo is still my favourite food. I was in Kathmandu in June/July and get chance to try MoMo in different location in Kathmandu. For me the best Momo in Kathmandu valley is at the Roof Top Restaurant from the Kathmandu Mall. The location is quite not so intresting but they have the best MoMo in town. I forget the name of the Restaurant. MoMo from Nanglo Resturant is also not so bad but the best one is from the Kathmandu Mall.

You can still get some delicious Momo in Maru Gali at Ram Dai Newari Bar.

Yogurt Lassi

 I am in Kathmandu since 1 month. Here we have wonderful summer right now. The temperature is above 30 degree. The best way to stay fresh is to drink a lot. One of my favourite cold drink is Yogurt Lassi. My wife makes  a  Yogurt lassi day before yesterday. It way very cool and fresh.

Here is the Recipe

Ingredients:

 
1 litre Yogurt
1 litre Cold Water
6 tblsp Sugar (Cheeni) or to taste
1 tsp Cardamom Powder, Elaichi Powder
Few Ice-cubes(optional)

How to make yogurt lassi:
  • Combine all ingredients and blend until smooth in a blender.
  • Pour in glasses and serve.

German Fast Food

I was in Berlin this week at ITB Fair. Fair means lots of work and less time to enjoy food. Near  Fair Ground I got chance to try the typical Berlin fast food called Bulette (Meat ball). It was great.
