Mana Chhoyla- Pork chilli

 

What is Chhoyla?

Chhoyla- Spicy meat, either roasted or boiled known as haku chhoyla or mana chhoyla. It is generally served with flattened rice and homemade wine. (jwalapa)

Ingredients

700 gm Pork

2 Table Vergetable Oil

1/5 Teaspoon Turmeric powder (Haldi)

10 seeds = Fenugreek (Methi seeds)

2 bunch Green onions

1/2 Teaspoon mined Garli

1/2 Teaspoon mined Ginger

1/3 Teaspoon Cucumin

1 Teaspoon hot chilly powder

Salt according to your taste

Prepartion

To make the haku chowla (black spicy meat), the meat should be roasted. For Mana Chowla it should be boiled properly. On the picture you will see the boiled one. After the meat is cooked in water or roasted, cut it into small pieces. Take a bowl to mix the meat with spices. First add the oil then tumberic powder, garli, ginger, cucumin and Chilly powder. Mixed the meat properly with the spices.

Please used hand to mixed the spcies rather than the spoon.This is the way how the people in nepal mixed up the chhoyla to give the natural taste.

Heat the extra oil on the pan to fry the fenugreek, Add the seed on the hot oil, when the seeds turns into black, put the seeds directly into meat. Please be careful pouring the hot oil with fenugreek into the meat. Add the green onions and mixed it again. Add Salt according to your taste.

The Chhoyla is ready to serve..

Alu Tama- Potatoes with bamboo shoots

What is Alu Tama?

Alu tama is the typical newari soup prepare with black eye beans, bamboo shoots and potatoes.


 


 


 

Ingredients

300 gm Plack eye beans

400 gm Bamboo Shoots

4 Tablespoon vegetable oil

2 Red onion finely chopped

2 Fresh tomato finely chopped

1/2 Teaspoon Garlic paste ( fresh garlic)

1/2 Teaspoon Ingwer paste (fresh ingwer)

1/5 Turmeric

450 gm Potato, pleed and cut into cube sizes

1.5 litre soup water ( used the pork boiled water or chicken)

1 Teaspoon cucumin

1 Tablespoon chilli powder ( if you like hot & spicy)

Salt according to your taste

 

Prepartion

To cook the Alu Tama, I prefer to use the pressure cooker. If you donot have the pressure cooker, you can also use the normal cooking pot. Heat the oil in the pressure cooker or pot, add the potato and beans, fry it for 5 minutes and stir it occassinally. Give the soup water into the pressure cooker (pot), add salt, cucumin, turmeric and cooked it untill the pressure cooker whistle or 30 minutes in pot.

Heat the extra pan with oil. Add the chopped onion, stir it for 2-3 minutes and add the bamboo shoot with some salt. Add tomato and cooked the bamboo shoot until it is ready.

Add the cooked bamboo shoots from the pan into the soup and cooked it for 10 mintues.

The soup is ready to serve...

Wo- Black Lentils Cake

What is Wo?

Wo is the kind of snack( fried cake). Wo is prepared from the black lentils. Here I have used the black lentlis which can be found in local european market. Unfortunately it is not possible to get a good quality black lentils in Germany. Well I used the URID DAL black lentlis. They are used all for dhal or soups, along with rice.

 


 

Ingredients

300 gm black lentlis

3 Tablespoon Vegetable oil

1/2 Teaspoon mined Garli

1/2 Teaspoon mined ginger

Salt according to your taste

 

Preparation

1. Soak the the lentlis separately for 4-5 hours (depends upon the lentils), the orginal lentils from Nepal takes 14-16 hours untill it turns soft.

2. Grind the lentils with garlic and ginger till it becomes very fine paste.

3. Add the Salt according to your taste.

Hit the non stick Pan with vegetable oil. Take the lentils paste with the hand. Make a ball shape, put it on the pan and press it with your finger to give the round shape as shown on the picture above. If the pan is too hot, add little water. Turn the Lentils, when it turns brown and fried it for 2-3 mintues.(Don't cover the pan)

Bara is ready to serve. As your taste, you can also add egg on it.
